Grease trap (grease interceptor)

A grease trap (or grease interceptor) is a chamber fitted on a commercial kitchen's drainage that captures fats, oils and grease (FOG) from the wastewater before it enters the main sewer, where FOG would otherwise congeal and cause blockages and odours. In Dubai it's a Dubai Municipality requirement: commercial food establishments must have an approved, correctly-sized grease trap (sized by the DM formula to the kitchen's flow) so all cooking-area drainage passes through it, and it must be cleaned/pumped on a regular schedule to keep working — a neglected trap overflows, smells and can fail an inspection. Installation and servicing should use a DM-approved provider, and the exact sizing, cleaning frequency and approvals should be verified for your premises.
