Extraction hood (kitchen canopy)

A kitchen extraction hood is the canopy over the cooking line plus its grease filters, ductwork and fan — the system that pulls grease-laden smoke, steam and heat out of the kitchen. The point most people miss is where the danger hides: the grease that condenses inside the canopy and all the way up the duct is highly flammable, so a hood that's only had its visible filters wiped is still a genuine fire hazard. That's why a commercial kitchen is expected to deep-degrease the whole system — canopy, plenum and the full duct run to the roof fan — on a schedule, not just soak the filters. It's different from a home extractor that's merely lost suction (usually a clogged filter or duct): the commercial risk is the grease itself. Scheduled canopy-and-duct cleaning is a kitchen-equipment specialist's job and a fire-safety essential.
