Grease interceptor (grease trap)
Also called: grease interceptor, grease separator, FOG interceptor
A grease interceptor is the larger, external or below-ground version of a grease trap — a chambered tank that slows a commercial kitchen's wastewater so fats, oils and grease (FOG) float to the top and food solids settle to the bottom, letting cleaner water pass to the drain. In Dubai it's usually a regulatory requirement for a food business, because FOG in the public sewer causes blockages, and interceptors are inspected. The critical maintenance point: an interceptor only works while there's room in it, so it must be pumped out and cleaned on a schedule — a neglected one overflows FOG straight into the drain, causing exactly the backups and smells it's meant to prevent, and can fail an inspection. Sizing, servicing and keeping the pump-out records is part of a commercial kitchen equipment maintenance regime, not an afterthought.
