Running a restaurant kitchen, what equipment maintenance should be on a schedule so things do not break mid-service?

I run a restaurant kitchen and equipment always seems to fail at the worst possible moment, mid-service, which costs me money and stress. I want to get ahead of it with a proper maintenance schedule rather than just reacting to breakdowns. What commercial kitchen equipment genuinely needs servicing on a schedule, and roughly how often, so the fridges, hood, gas and dishwasher do not let me down at peak time? Trying to build a preventive routine.
