Running a restaurant kitchen and the quotes for deep cleaning and the extraction/hood service vary a lot between providers. That last point matters in Dubai, an inspection-ready certificate is part of what you're paying for. The cheapest quote often cleans the visible hood and canopy but not the full duct to the fan, which is where the fire risk actually sits.
