Our commercial gas range burners are uneven — weak, yellow flames on some rings. Why?
On our commercial gas range some burners have gone weak with yellow/uneven flames instead of a strong blue, cooking unevenly and slowly.

Short answer: a healthy gas burner burns a crisp BLUE flame; weak, yellow or uneven flames mean the air/gas mixture or the gas delivery is wrong, and in a commercial kitchen it's most often blocked/dirty burner PORTS (grease, food debris, spillage clogging the flame holes) or a mis-set/blocked AIR SHUTTER — both usually a proper clean-and-service. It can also be low/incorrect GAS PRESSURE or a partly blocked jet/injector. A YELLOW flame matters: it burns cooler (slow, uneven cooking), soots up your pans, and signals incomplete combustion — which produces more carbon monoxide, so on a commercial range it's a service-it-now issue, not cosmetic. Start with a thorough clean of the ports and air shutters; if the blue flame doesn't return, get the gas pressure and injectors checked by a competent gas technician.
What the flame is telling you: - Strong blue flame = good air/gas mix, complete combustion. - Yellow/orange, weak, lazy or uneven flame = wrong mix or poor gas delivery — burning cooler and incompletely.
The usual causes (commonest first): - Blocked/dirty burner ports: grease, food, boil-overs and debris clog the little flame holes, so the flame is patchy and weak. Extremely common on a working range — often just needs the burners removed and properly cleaned (ports cleared). - Air shutter mis-set or blocked: the burner's air intake sets the mix; if it's clogged or maladjusted, you get a yellow flame. Clean/adjust it. - Low or incorrect gas pressure (regulator/supply), or a partly blocked jet/injector — starves the burner. Needs a gas tech. - Wrong/worn parts (burner caps not seated, damaged burner).
Is a yellow flame a safety issue? - Yes, treat it seriously: incomplete combustion produces more carbon monoxide, sooty deposits on pans/equipment, and it cooks poorly. In a commercial kitchen (enclosed, gas, staff) it's a service-now item — and gas work must be done by a competent gas technician, not bodged.
What to do: - Clean first: burners off, ports cleared, caps seated correctly, air shutters cleaned/checked — this fixes a large share of yellow-flame cases. - If blue doesn't return: get gas pressure and injectors checked. Don't keep running yellow-flame burners.
Common mistake: cooking on weak yellow flames for weeks (slow service, sooty pans, CO risk) instead of servicing them. Get a commercial kitchen equipment technician (gas-competent) to clean/service the burners and check the gas side. Operators — did a proper port clean bring your blue flame back?
Ours was exactly this — yellow, lazy flames cooking slowly, and it was clogged ports plus gunked-up air shutters from months of spillage. A proper strip-and-clean of the burners brought the blue flame straight back; we'd been limping along blaming the range. The CO/incomplete-combustion point is the one to take seriously in a closed kitchen — it's not just slow cooking, it's a safety thing. Build the burner clean into the PM so it doesn't creep back. If cleaning doesn't fix it, it's the gas side and a proper technician, not a DIY on a commercial gas range.
Blue-flame discipline is a cheap habit that saves money and risk — a yellow flame wastes gas (burns cooler, cooks slower) and soots everything, quite apart from the combustion-safety angle. Most cases are cleaning: ports and air shutters clogged by the daily grease and spills. Keep them clean and seated and they stay blue. When cleaning doesn't restore it, it's pressure or injectors and that's a gas-competent tech's job, certified, not a have-a-go. In a commercial kitchen you don't gamble with gas. Clean regularly, and service the gas side properly when needed.
