Our ice machine is making less ice and it tastes off — is it scale, and how do you maintain one?

The ice machine in the café is going downhill: it's making less ice than it used to, the cubes come out smaller and cloudy, and — the bit that worries me most — the ice has started tasting slightly off. Customers will notice that fast.

Given the UAE's hard water, I suspect scale, but honestly I've never maintained one and don't know what's involved. It just sat there making ice until now.

What I want to understand:

  • Is reduced/cloudy ice and the off taste typically scale, or something else (a filter, the water, hygiene)?
  • What does proper ice-machine maintenance actually involve, and how often?
  • Is the off taste a hygiene issue I should act on quickly?

Want to fix it and set up a routine so it doesn't creep back. What do other F&B folks do?

Short answer: less ice + smaller, cloudy cubes + an off taste is the classic UAE ice-machine trio — hard-water scale killing production, and biofilm/mould causing the taste and hygiene problem. Both are fixed by a proper descale-and-sanitise, and prevented by a scheduled clean plus a water filter.

What's happening: - Scale (hard water): the UAE's hard supply deposits limescale on the evaporator plate where ice forms, so it insulates the plate — you get less ice, smaller and cloudy cubes, and eventually a machine that struggles or trips. This is your production drop. - Biofilm/mould/slime: the constant cold-and-wet inside is a perfect breeding ground; that's what causes the off taste and smell, and it's a genuine food-hygiene issue, not just unpleasant.

Proper maintenance (and frequency): 1. Descale the water/ice-contact parts with an approved ice-machine descaler — typically every 3-6 months in hard-water UAE, sooner if you see cloudiness. 2. Sanitise to kill biofilm/mould at the same time (this fixes the taste). 3. Change the water filter — a scale-reducing filter dramatically slows the whole problem and protects the machine. 4. Wipe the exterior/air filter so the condenser can breathe.

Act on the taste promptly — an off taste means biofilm, and that's the hygiene side you don't want in an inspection or a customer's glass. Use the manufacturer-approved descaler/sanitiser (not random acid) so you don't damage the plate. A kitchen-equipment specialist can do the first deep descale-and-sanitise and set you up with a filter + schedule. What descaling interval are others finding keeps up with the hard water here?

The water filter is the highest-value bit for UAE hard water — fitting/renewing a scale-reduction filter slows scale build-up so much that your descaling interval stretches and the machine lasts longer. Treat the filter change as a scheduled consumable (mark it on the calendar), same as the fridge logs and the hood clean. And yes, act on the taste fast — biofilm in an ice machine is exactly the kind of thing that shows up badly in a hygiene inspection, because ice is a ready-to-eat food.

Hard-water sufferer generally — scale is relentless here on anything that heats or freezes water. For the ice machine specifically, a friend's café went from constant "why is there no ice" call-outs to basically none once they fitted a proper filter and put descaling on a 3-month calendar. The reactive route (wait till it barely makes ice, emergency descale) costs more in lost service and call-outs than the scheduled one. Prevention wins with UAE water.
